How to make the perfect Victoria Sponge

Cake. When it's delicious it's fabulous! However, when it's a little dry or not quite cooked in the middle, it a whole different cake game. Baking is, fairly obviously, my thing and here I will give you the recipe to make that perfect and classic Victoria sponge that will definitely have your friends commenting on how deliciously moist your cake is - which is well known for being the ultimate in compliments!

Classic victoria sponge recipe

Recipe

225g soft butter

225g caster sugar

225g self raising flour

4 eggs

1 tsp baking powder

Method

Preheat the oven to 180 degrees centigrade.

Cream the butter and sugar together in a large bowl

Beat the eggs together and add to the mix, slowly stirring all the time.

Sieve the flour and baking powder and fold that into the mixture.

Put into a baking tin sized to suit your needs.

Place in the centre of the oven for 20-25 minutes until it turns a lovely golden brown colour.

To check it's cooked put a fork into the middle - if it comes out clean, you're ready!
